Cinnamon Sugar Donut Muffins

I can't believe I haven't posted about these delicious little muffins before now. I couldn't find my paper copy of the recipe the other day and was sure they'd be here. But no, I had to go searching elsewhere. And now that I did, I've been seeing these little guys pop up all over the place.

When I made them, I used the recipe here.
I also found a "healthier" recipe here.
And here's my actual recipe that I usually use.
(I found it)

I guess I made them a little bit healthier this time, by using whole wheat flour. Just a note: they do taste better with white flour, but if you've never had them or haven't had them in a while, you won't hardly notice the difference.

Here's what I know about these muffins:
  • You can make them regular size if you want, but they are so much easier to just pop in your mouth when they are this 2-bite small size.
  • They are better for you if you just dip the top in butter and cinnamon sugar, but they taste better if you dip the whole thing!
  • The recipe makes a lot, which is a good thing, because they won't last long!

Sweet Treats Club: May

It's the last month of school!
The last month of Sweet Treats Club!
We made it!

I wanted to make something amazing for the last month, and I had some leftover oatmeal from another recipe, so I went to Pinterest to search out a delicious recipe. And boy, did I find it! These oatmeal creme pies are soooo good! Take a look at how delicious the picture looks, then just imagine actually eating one...

This amazing recipe came from girl who bakes.
They turned out so great I can't wait to make them again.

They are super sweet, so maybe not for everyone, but just look at all of that creme oozing out. Yum!

For the Sweet Treats, I wrapped them individually and put them in the empty oatmeal canister to mail.
It turned out super cute, I think!

T is for Treats

We are counting down the school days until the end of the year. Today was T for treat day, which means a.) there are only 6 days left until summer! and b.) I had to make some tasty treats for the 2nd graders. And here they are...sugar cookie sandwiches...

Break and Bake Dough + Frosting from a Can = Tasty Little Treats!

Happy (almost) Summer!

A New Kind of Cakeball!

Could cakeballs be...gasp...made a tiny bit healthy(er)?
A flash of cakeball genius hit me as I was making strawberry yogurt filled cupcakes the other day.
I had a bowl full of the insides of vanilla cupcakes and half a carton of yogurt leftover.
Hmm...I thought...yogurt is kind of the same consistency as frosting...I wonder if it would hold cakeballs together?...I wonder if it would taste good?...Let's give it a try...

You can see the little strawberry pieces from the yogurt...it looks a little funny, but it actually turned out pretty great. I put them in the freezer for about 15 minutes, then dipped them in white chocolate almond bark.

My taste testers said that they didn't taste like regular cakeballs, but not in a bad way. They thought the yogurt cakeballs were lighter than the frosting kind and would be perfect for brunch!

Now, if only there was a way to make almond bark healthy(er)...

Top Seven Reasons I Love My New Cupcake Corer

7. It's cute!

6. The middle part is shaped like a flower (I know, more cuteness).

5. The cute flower shape shows you exactly where to stop so that the hole won't be too deep.
(Not just cute, but also functional!)

4. After you pull out the center of the cupcake, the little red plunger lets
you drop it right into a bowl; no mess and no digging out the cake.

3. It makes a nice round hole everytime...Beautiful!

2. The hole is the perfect size for filling up with a tasty suprise,
in this case strawberry yogurt.

1. It makes filling cupcakes so much easier! Yay!
